From Delhi 6 to Dubai: A culinary chat with masterchef Kunal Kapur

We recently caught up with Chef Kunal Kapur at his Dubai restaurant, Pincode, a space that’s as much about storytelling as it is about food.
We started with the name. Why Pincode? 'Because every dish has an origin,' he told us, linking it back to his roots in Delhi 6, the Old City. The idea is simple: Indian food isn’t just one thing, it’s a map of memories, cultures, and childhood favourites.
He also cleared up a few common myths around Indian cuisine. 'It’s not all spicy and oily,' he said.
One of our favourite moments was a special segment where we explored dishes from his new menu, each one paired with a personal, nostalgic story. Like Granny’s Milk Toast, inspired by his grandmother, or a street-style chaat that instantly transported him back to the lanes of Delhi.
